Disulfide bonds in proteins are discussed in:
Arnold, V., Z. physiol. Chem., 1911, 70, 300, 314.
Heffter, A., Meal. naturwissensch. Arch., 1907, 1, 81 ; Chem. Zentr., 1907, 11, 822.
But no reason to believe these were the first. They are cited in:
https://pubmed.ncbi.nlm.nih.gov/19872845/ and I have not looked up the original articles
